Chicken leg quarters make a simple weeknight dinner that can be in the oven cooking while you’re settling in after a long stressful day. If you can spare a few minutes in the morning or even the night before, this dish can be prepped ahead. To keep the kids happy, you can change it up by substituting grapes and oranges for the tomatoes & lemon and skip the olives & mushrooms. Makes for a great picnic entree too!
Good Enough for Guests Chicken- serves 6-8
- 1 value pack chicken leg quarters, or chicken thighs
- 2 lemons, (1 sliced, 1 juiced)
- 1 red onion, sliced
- 4-6 cloves garlic, sliced
- 1/3 c. pitted olives
- 8 oz. grape tomatoes
- 8oz. small or button mushrooms
- 2T. fresh herbs, Oregano, Rosemary or Sage
- 1/4c. olive oil
- Preheat oven to 400°.
Place leg quarters on a rimmed baking sheet. Slice one lemon. Scatter the vegetables & lemon slices over the chicken. Sprinkle fresh herbs overall. Just before placing in the oven, pour olive oil and lemon juice over the entire dish. Dust with salt & pepper. Roast for 45 minutes on the middle rack or until 165°. To brown and crisp up, place one rack higher under the broiler for 2 minutes or change the cooking feature to convection, keeping the temperature at 400°, for a few minutes. Serve over fresh pasta or couscous.
